Do you love cookies, but hate the mess and all the ingredients you need to make them from scratch? Here's a great way to whip up those cookies that your kids crave! It's very inexpensive, quick to make, and they will be gone before you know it.  Simply buy a box or two of your favorite cake mix.  Any kind, any flavor. ( The carrot cake mix is especially good.) All you need to do is add two eggs and one third cup of vegetable oil to the mix.  Don't add any water or other liquid.  Mix together, and shape into balls of about one inch. Place  2 inches apart on an ungreased cookie sheet, and bake at 350 degrees for 8 to 10 minutes.  You will have the most delicious, soft and fluffy cookies you have ever had!  You can frost them if you wish.  Cream cheese frosting works well for just about any flavor cookie, but works especially well on the carrot cake ones! You can add things like nuts or raisins if  you want.  The pineapple cake mix makes cookies that you can eat by the handful.  Try adding a can of crushed pineapple to the mix.  You won't believe the flavor!
